Asparagus plays another anti-inflammatory role. It’s great for digestive support which are rich in fiber.. It helps stabilize digestion and regulate sugar levels. 1 tablespoon coconut oil
1/3 cup onion of choice diced
1 cup chopped Kale
1 cup peeled, chopped beet
1/2 cup chopped carrot
1 cup chopped asparagus
Large handful flat-leaf fresh parsley, chopped
1 tablespoon minced ginger
5 cups water or more depending how much you want to make|
Optional desired minced jalepeño or chile pepper
Optional desired cayenne pepper and chilli flakes
Optional bake tilapia separate if you want to add protein
- Heat the oil in a large pot over medium-high heat. Add the onion and sauté for a few minutes until begins to brown. Add the half of the parsley and sauté for another minute.
- Add the water, beet, carrot, ginger, kale, and seasoning of choice. Increase the heat to high. Bring to a boil, reduce the heat to medium/low, cover and simmer for 10 to 15 minutes.
- Add the asparagus and cook for another 5 minutes. When the asparagus are bright green and still firm then it’s ready to eat. Add the remaining parsley. Place in bowls and serve warm. (Optional:Add 4 oz of chopped tilapia in each bowl.)
