One of my other favorite pierogies are the blueberries or strawberries. As a vegan, I had to recreate this recipe. I am happy to share this recipe because it’s so good.
Warning: Perfecting the pierogi technique will take time, but you will get the hang of it. Practice makes perfect. I have been making pierogies for many years.
Last warning: Making pierogies takes up your day.
Ingredients for the dough:
2 cups all purpose flour or gluten free (*GF dough breaks easily)
1/2 cup warm water
1/4 cup Melt (vegan margarine brand) or canola oil
Ingredients for the filling filling
Your choice of Blueberries, strawberries, or raspberries
Dough Direction Prep:
-Mix all the dough ingredients on a big wooden cutting board or a clean surface. Knead until smooth, add some extra warm weather if needed.
-Let it set for 30 min covered.
Directions to start the process:
-Separate the dough in 2 parts.
-Roll out the first part till its 1/8″ thick.
-Use the top water glass to cut circles or use a 3-4″ circle cookie cutter.
Part 2: *Start boiling water with a large pot
-Have a warm glass of water by your side. This will be used to seal it closed if needed.
-Grab your circle and place it on top of your thumb and pointer finger.
-Add some fruit 1-2 tbs.
-Put some water along the 1/2 edge of the circle.
-Fold it over and pinch the center and work your way along the edge. Make sure it’s completely sealed or water will get in
-Once it’s completely sealed, gently drop the pierogis one by one in boiling water. Stir gently.
-When the pierogis floats, scoop it up, and place it on a plate.
Part 3: * The day you will eat the pierogis.
-Get a large pan. Add some olive oil or coconut oil.
-Add the pierogis on the pan.
-Cook both sides till lightly brown 🙂
-Optional sprinkle a little bit powder sugar.
-Once it’s ready, Enjoy your Vegan-licious Pierogis!
